So I waited. One Saturday, I rolled up to Ann's Snack Bar in anticipation of the well renown Ghetto Burger. This double-decker covered with cheese, bacon, chili, lettuce, tomato and onion has been an Atlanta legend for more than 30 years. Ms. Ann's surly attitude is equally infamous. Every review, from the local blogger, to the Wall Street Journal declares the food is worth the wait, and possible tongue lashings.
Only eight patrons are allowed inside at a time. Anyone who tries to bypass the line outside on the screened patio, is promptly told, "You can't come in here now!" Then, shamefully, they retreat. But unless you've done the research, you wouldn't know the people scattered here and there, are in a line. They occupy the steps to the front door and perch on weathered patio chairs and tables. Then the honor system is in full effect.
Take note of who was there before or you'll lose your place in line. Remember, patience is a virtue. Only the strong will taste victory. Everyone doesn't make it inside. Many who started with me fell victim to fatigue, hunger or impatience. I waited. I smelled the burgers and onions searing on the grill. I watched through the window as the others ate with glee. I endured. Meanwhile, outside, camaraderie forms. Veterans shared stories, tips and descriptions of menu items. First timers are enlightened. Together, we persevere.
When the eaters dismount the stools, our excitement rises. Once they exit, we are granted entry. We sit and wait, watching as Ms. Ann takes her time to clean off the duct taped bar, the cheese and crumb-ridden grill. She cleans everything, including the kitchen sink. Then she takes our orders. We are ready. We've been waiting long enough and talking to enough regulars to know exactly what we want. She asks our names and how to spell them. It's the same attention to detail that makes the food so good. She writes down our requests.
Be advised, you need to place your complete order when she approaches, there will be no amendments or additions. "I can't be moving back." She makes all eight orders at the same time. Ms. Ann meticulously molds each beef patty by hand before dropping it on the grill. Then systematically adds seasoning and onions, flipping the meat at regular intervals. When they are finished cooking, she builds her masterpieces one at a time. She toasts the buns, then adds condiments. She spreads the mayo first, then squeezes rings of ketchup and mustard onto the bun, next up is the chili, if necessary. Then, the cheese-covered patties are stacked and topped off with lettuce and tomato. Perfection!
Utterly exhausted, I had to take a second to marvel at the art on a disposable paper plate. Then, I gathered my wits and took a bite. I felt ridiculous after waiting four hours, but the burger really is that good. I have no regrets, just advice. Go prepared for a long wait, take a book, some snacks and a friend, dress comfortably and enjoy the experience.
